These little chocolate, date and nut bites are such a fun and delectable treat! They are rich, sweet and crunchy. You can make a batch of these, keep them in the freezer and enjoy them throughout the week. YUMMY!
If you’re like me and you love sweets, you really should give these a try. Making these chocolate, date and nut bites are a great way to curb your sweet tooth without eating the artificial ingredients that are included in many other snacks. Don’t get me wrong, I’ll have a Snickers bar from time to time but I mostly opt for snacks with fewer and healthier ingredients.
Ingredients
- 1 cup of pitted medjool dates (about 8-10 dates)
- 1/2 cup of raw mixed nuts
- 1/2 cup of semisweet chocolate chips (you can use dark chocolate if you want)
- 1 tablespoon of coconut oil
- 1/2 teaspoon of cinnamon
- 1/2 teaspoon of vanilla extract
- Pinch of salt
Instructions
- Remove the pits from the dates.
- Blend or process the dates, nuts, cinnamon, vanilla extract and pinch of salt in a food processor or high speed blender. Add 1-2 tablespoons of hot water if the “batter” is too thick. You might need to divide the “batter’ in half for easier blending.
- Melt the chocolate chips with the coconut oil in the microwave in 30 second increments. You can also melt it on very low heat on the stove.
- Line a muffin pan with cupcake liners and add the date/nut “batter” to the each individual liner. Fill them about a third of the way full.
- Top with melted chocolate and some chopped nuts.
- Freeze for 25-30 minutes. Enjoy!!
