6-Ingredients Chocolate, Date and Nut Bites

These little chocolate, date and nut bites are such a fun and delectable treat! They are rich, sweet and crunchy. You can make a batch of these, keep them in the freezer and enjoy them throughout the week. YUMMY!

If you’re like me and you love sweets, you really should give these a try. Making these chocolate, date and nut bites are a great way to curb your sweet tooth without eating the artificial ingredients that are included in many other snacks. Don’t get me wrong, I’ll have a Snickers bar from time to time but I mostly opt for snacks with fewer and healthier ingredients.

Ingredients

  • 1 cup of pitted medjool dates (about 8-10 dates)
  • 1/2 cup of raw mixed nuts
  • 1/2 cup of semisweet chocolate chips (you can use dark chocolate if you want)
  • 1 tablespoon of coconut oil
  • 1/2 teaspoon of cinnamon
  • 1/2 teaspoon of vanilla extract
  • Pinch of salt

Instructions

  1. Remove the pits from the dates.
  2. Blend or process the dates, nuts, cinnamon, vanilla extract and pinch of salt in a food processor or high speed blender. Add 1-2 tablespoons of hot water if the “batter” is too thick. You might need to divide the “batter’ in half for easier blending.
  3. Melt the chocolate chips with the coconut oil in the microwave in 30 second increments. You can also melt it on very low heat on the stove.
  4. Line a muffin pan with cupcake liners and add the date/nut “batter” to the each individual liner. Fill them about a third of the way full.
  5. Top with melted chocolate and some chopped nuts.
  6. Freeze for 25-30 minutes. Enjoy!!
